Fill your pot with enough cold water to cover your potatoes. Add 2-3 tsp salt to taste. It should taste like the sea.
Cook your potatoes until fork tender. Roughly 25-30 minutes.
Once cooked, cool and add your oil and minced garlic.
Assemble onto a baking sheet. You may need two depending on the size of your sheet.
Using the bottom of a cup, smash each potato to 1/4" or 1/2" thick.
Sprinkle with your remaining salt, pepper, and parsley.
In a 425°F preheated oven, bake for 25-30 minutes. Enjoy.
