GARLIC SMASHED POTATOES

Tired of the same old mashed potatoes? These garlic smashed potatoes are a game changer. These are crispy-on-the-outside, fluffy-on-the-inside. They are perfect if you are looking for a side for a get together or a new twist on your usual comfort food

Ingredients

  • 1 ½ lb Baby Yukon Gold Potatoes
  • 1 tbsp Oil I used high smoke avocado oil
  • 2-3 tsp Salt (for boiling) (plus ¾-1 tsp for sprinkling)
  • ¼ tsp Black Pepper
  • 3 Garlic Cloves Minced
  • 1-2 tbsp Parsley

Instructions

  • Fill your pot with enough cold water to cover your potatoes. Add 2-3 tsp salt to taste. It should taste like the sea.
  • Cook your potatoes until fork tender. Roughly 25-30 minutes.
  • Once cooked, cool and add your oil and minced garlic.
  • Assemble onto a baking sheet. You may need two depending on the size of your sheet.
  • Using the bottom of a cup, smash each potato to 1/4" or 1/2" thick.
  • Sprinkle with your remaining salt, pepper, and parsley.
  • In a 425°F preheated oven, bake for 25-30 minutes. Enjoy.
