Ingredients
2cupsAll Purpose Flour Spoon and levelled. Plus 1 tbsp for dusting
¾cupLight Brown Sugar120g
¼tspNutmeg
½tspSalt
1tspMolasses
¾tspBaking Powder
2tspVanilla
2tbspButter 30g
1Overripe Banana
1tspGinger Powder
½tspMixed Spice
1tspCinnamon
¼tspBaking Soda
Instructions
In a large bowl, mash one medium overripe banana.
Add in 2 tsp vanilla, 2 tbsp melted unsalted butter, 1 tsp molasses, and 3/4 cup light brown sugar (120g). Mix well.
In a separate bowl, add in 2 cups flour (250g), 1/2 tsp salt, 1 tsp cinnamon, 1/2 tsp mixed spice, 1/4 tsp nutmeg, 1 tsp ginger, 3/4 tsp baking powder, and 1/4 tsp baking soda.
Dust your surface with 1 tbsp flour and roll out your dough to 1/2" thickness.
Use a 2 1/2" cookie cutter to cut out your bulla and bore a small hole in the middle of the bulla.
Bake at 350F for 10 mins. Brush with 1/2 tbsp melted butter once done. Let cool for at least 10 mins before enjoying.
Notes
You can also do 1 tsp baking powder if you want a little more rise and softness.
