JAMAICAN EASTER BUN

Jamaican Easter Bun, a sweet and tender spice bun, is an essential part of Easter celebration in Jamaica. When eaten with cheese, it is referred to as “bun and cheese”.

Ingredients

  • 2 cups Flour (250g)
  • 1 cup Brown Sugar (140g)
  • 2 ¼ tsp Baking Powder (12g)
  • ½ tsp Salt (3g)
  • 1 ½ tsp Cinnamon (9g)
  • ½ tsp Nutmeg (3g)
  • 1 ½ tsp Mixed Spice
  • ¼ tsp Ginger Powder
  • 1 cup Malta (250ml) Or Stout/Water
  • ½ tsp Rose Water (2ml)
  • ½ tsp Baking Soda
  • ½ tsp Browning
  • 1 ½ tsp Vanilla (7ml)
  • ¼ tsp Almond Extract (1ml)
  • ½ tsp Lime Zest or 1 tsp lime juice
  • ½ tbsp Molasses (7ml)
  • ¼ cup Melted Unsalted Butter (56g)
  • 1 Large Room Temp Egg
  • ½ tsp Oil (2ml)
  • ¼ cup Raisins (optional)

Glaze

  • 1 tsp Brown Sugar
  • ½ tsp Honey
  • 1 tsp Water

Instructions

  • Sift all your dry ingredients together and whisk to combine.
  • In a separate bowl, combine all your wet ingredients and mix well.
  • Add your wet ingredients to your dry ingredients and mixed until well combined.
  • Add your batter to a greased and lined baking pan. Tap your pan a few times to release any large air bubbles.
  • Bake at 350°F for 55 minutes or until the toothpick comes out clean.
  • Once out of the oven, cool in the pan for 10 to 15 minutes before transferring to a cooling rack.
  • Brush your bun with 1 tsp brown sugar, 1/2 tsp honey, and 1 tsp water
  • Enjoy with some Jamaican Tastee Cheese (found in West Indian grocery store).

Notes

Do not include the foam in your measurement when measuring Malta/Stout.
When adding your egg, remove the eye of the egg, as you see me doing in the video. This will remove a lot of the rawness from the egg.
