JAMAICAN FESTIVAL

These Jamaican festival are delicious sweet and crispy on the outside with a fluffy interior. It is a versatile dish that can be served any time of the day.

Ingredients

  • 2 cups Flour (125g) 250g
  • 1 cup Yellow Corn Flour
  • ½ cup Brown Sugar 80g
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 1 tbsp Softened Butter
  • ¼ cup Milk 62ml
  • ½ cup Water 125ml

Instructions

  • Add in your dry ingredients and whisk to combine.
  • Add in the softened butter and use your fingers to mix it in the flour mixture.
  • Add in your wet ingredients and knead your dough.
  • Cover and rest for 30 minutes to one hour.
  • Divide your dough into 12 balls.
  • Roll each ball lengthwise.
  • Heat 2 cups of oil on medium heat until the temperature is between 350°F and 365°F.
  • Fry for 2-3 minutes on each side until it reaches a golden brown colour.

Notes

If you do not have yellow corn flour, you can substitute with 1/2 cup fine grain cornmeal. Corn flour is preferably as it is not as gritty as cornmeal.
