JAMAICAN PEANUT PORRIDGE

This traditional breakfast dish, made with raw peanuts, offers a rich, nutty taste that's perfectly balanced with a touch of cinnamon, nutmeg, and sweetness from condensed milk.

Ingredients

  • 1 cup Raw Peanuts 180g
  • ¼ cup Quick Cooking Oats
  • 1 cup Boiling water For soaking
  • 2 cups Water for cooking
  • 1 Cinnamon Stick
  • ½ tsp Nutmeg
  • ¼ tsp Cinnamon
  • ½ cup Condensed Milk
  • ½ tsp Salt
  • 1 tsp Vanilla
  • 1 ¼ cup Milk

Instructions

  • Soak 1 cup raw peanuts, 1/4 cup quick cooking oats with 1 cup boiling water for at least 10 mins. Set aside.
  • Add 2 cups water to a pot with 1 cinnamon stick and 1/2 tsp salt. Bring to a boil.
  • Blend the soaked peanuts with 1/2 tsp nutmeg, 1/4 tsp cinnamon, and 1 1/4 cup milk until smooth.
  • Add the mixture to the pot and cook for 10 mins on med heat. Stir frequently.
  • Reduce to low and add 1 tsp vanilla and 1/2 cup condensed milk. Cook for 5 mins.

Notes

If you prefer a thicker porridge, then reduce the 2 cups of water needed for the pot by 1/4 to 1/2 cup.
