Wash two apples, peel the skin and remove the core.
Grate the apples and add to a bowl. You can also dice the apples if you prefer chunks in your apple bread.
Add in 1/2 tsp cinnamon, 1/4 cup sugar and lime juice. Mix to combine then set aside. You want the apples to absorb some of the flavor before you add it to the batter. Plus, it will create extra liquid that will add to the batter.
In a separate bowl, add all your remaining dry ingredients and mix well.
Add in your apple mixture and the rest of your ingredients. Mix until well combined.
Pour out your batter in a greased and lined baking pan and bake at 350°F for 50-55 minutes or until the toothpick comes out clean.
Once out of the oven, cool in the pan for 10 to 15 minutes before taking it out.
Transfer it to a cooling rack and cool completely before cutting.
