BAKED JAMAICAN FESTIVAL

These baked Jamaican festival are deliciously sweet with a fluffy interior. It is a versatile dish that can be served any time of the day.

Ingredients

  • 1 cup Flour 125g
  • ¼ cup Fine Grain Cornmeal 60g
  • ¼ cup Brown Sugar 70g
  • tsp Baking Powder
  • ½ tsp Salt
  • 1 tbsp Softened Butter 14g
  • 3 tbsp Milk, room temperature 45ml
  • 3 tbsp Water, room temperature 45ml
  • 2 tbsp Oil or as needed for brushing

Instructions

  • Sift your dry ingredients and whisk to combine.
  • Add in the softened butter and use your fingers to mix it in the flour mixture.
  • Add in your wet ingredients and knead your dough.
  • Cover and rest for 30 minutes to one hour.
  • Divide your dough into 6 balls. You can sprinkle a little flour on the dough to make it easier to roll.
  • Roll each ball lengthwise.
  • Place the festivals on a greased wire rack over a baking sheet and grease both sides of the festival.
  • Preheat your oven to 425°F and bake for 10 minutes. Remove from the oven and lower your temperature to 350°F. Grease both sides of the festival once more and place back in the oven for another 5 minutes.
  • Cool for at least ten minutes before enjoying.
