BLUEBERRY COBBLER

This blueberry cobbler is the perfect comfort food. It requires simple ingredients and only 10 minutes to prepare.

Ingredients

FILLING

  • 2 cups or 1 pint Blueberries
  • ¼ cup White Sugar
  • ½ Lime
  • ½ tbsp Cornstarch
  • tsp Salt
  • ½ tsp Vanilla

BISCUIT

  • 1 cup Flour
  • ¾ cup White Sugar
  • 1 ¼ tsp Baking Powder
  • ¼ tsp Salt
  • ¼ tsp Cinnamon
  • ½ cup Melted Unsalted Butter (1 stick)
  • ¼ cup Milk

Instructions

  • Wash 2 cups/1 pint of blueberries and add to a baking dish.
  • Squeeze the juice from half a lime over the blueberries and mix well.
  • Add in your sugar, cornstarch, salt and vanilla and mix well.
  • To a bowl, add your dry ingredients and mix until well combined.
  • Add in your melted butter and milk and mix well.
  • Spoon the biscuit mixture over the filling and evenly spread it out.
  • Bake at 375°F for 35 minutes.
  • Cool for 10 minutes before cutting.
  • Serve warm as is or with vanilla ice cream.
