JAMAICAN STEAMED PAK CHOI (BOK CHOY)

Ingredients

  • 7 Baby Pak Choi
  • 2 Carrot
  • 1 Tomato
  • 1 Large Scallion/Green Onion
  • 1 tbsp Margarine/Butter - I used vegan butter in this recipe.
  • ½ tsp Salt or to taste
  • 4 Thyme Sprigs
  • ¼ Red Bell Pepper
  • ¼ Green Bell Pepper
  • ½ tsp Garlic Powder or to taste
  • ½ tsp All Purpose Seasoning or to taste

Instructions

  • Start by washing all your vegetables with vinegar and water.
  • Using a knife, cut and discard the end of the pak choi, then chop the remaining vegetable into small pieces.
  • Peel the carrot and then thinly slice them.
  • Dice your tomato, red and green bell peppers.
  • Add all your vegetables to your pot along with your thyme stems, salt, butter, garlic powder and all-purpose seasoning.
  • Cover and cook on medium heat for 15 minutes. Taste and adjust your seasoning to your preference.
