Ingredients
½cupMelted Unsalted Butter
2 ½cupBrown Sugar (350g)
3cups Flour (375g)
2tspBaking Powder
½tspBaking Soda
2tspCinnamon
1tspNutmeg
1tspGinger Powder
½tspPimento Powder (allspice)
1tspMixed Spice
2cupsFreshly Grated Coconut (200g) (from 1 small coconut)
2Large Eggs
1cupMilk (250ml)
1cupCoconut Milk (250ml)
½tspSalt
¼cupCoconut Oil
2tspPure Vanilla Extract
Instructions
Mix all your dry ingredients together.
Add in your wet ingredients and mix well.
Pour your mixture into two bread pans and bake at 350°F for 45-48 minutes.
Cool for at least 15 minutes before cutting.
Notes
I mixed all my ingredients in one bowl, but I would recommend separating your dry and wet ingredients first and then combine them. This just allows the ingredients to mix out properly.Also, my coconut oil was not melted and was a bit clumpy to mix. I would recommend using melted coconut oil.
