Wash and dry the mature breadfruit.
Cut out the stem and mark an x on the opposite end.
Bake in a preheated oven at 425°F for 2 hours. You can wrap it in foil or roast as is.
The breadfruit is done when a knife clean through it clean.
Once cooled, peel the skin and cut the breadfruit in quarters.
Remove the heart and cut the breadfruit in slices. The thinner the slice, the crispier it will be when you fry it.
Lightly sprinkle salt on both sides of each slice of breadfruit.
Add 2 tbsp oil to a pan and fry on medium heat for 2-3 mins per side.
