ARE GREEN PLANTAIN AND GREEN BANANA THE SAME?
Plantains have thicker skins, are starchy, and have less sugar than bananas. While bananas can be eaten cooked or raw, plantains are considered more like a vegetable than a fruit. They are typically consumed boiled, sautéed, fried, or baked. Plantains are longer, curved and have thicker skin. They ripen in the same way that bananas do, from green to yellow to dark brown. They both get sweeter as they darken.
INGREDIENTS NEEDED FOR JAMAICAN GREEN PLANTAIN PORRIDGE
1. Green Plantains – You can find these in some of your typical grocery stores like Walmart or any West Indian grocery store.

HOW TO MAKE JAMAICAN GREEN PLANTAIN PORRIDGE
1. Bring 1 can of coconut milk, 1 cinnamon stick, 1/2 tsp salt and 1 cup of water to a boil on medium heat.
2. Wash and dry your green plantains before peeling. Cut off the top and bottom ends of each finger of banana. Make a slit lengthwise in the plantain and used your fingers to remove the skin. Ensure to remove any remaining green bits on the plantain, otherwise, it will leave a stain taste in your porridge.
3.Cut your plantains into pieces and add to a blender with 1 cup water, 1/2 tsp nutmeg, 1/4 tsp cinnamon, and 1/2 cup milk. Blend until smooth.
4. Add your plantain mixture to your pot and whisk briskly to avoid any lumps from forming.
5. Cover and reduce the heat to medium low and cook for about 15-20 minutes. Stir every 5 minutes to prevent any lumps from forming.
6. Add in your condensed milk, vanilla and brown sugar, then turn off the heat.
VARIATIONS
You can add rolled oats to the porridge. Just add it when you are blending the plantains.
For a dairy free alternative, replace the cow’s milk with almond, cashew, oat or soy milk. Or just add in more coconut milk. You can replace condensed milk with coconut condensed milk, but it is pretty pricey. You can also opt to make your own homemade condensed milk using your plant base milk as your base.
If you want your porridge even creamier, swap out the brown sugar with even more condensed milk.
WHAT TO SERVE WITH YOUR PLANTAIN PORRIDGE?
A lot of Jamaicans typically enjoy porridge with some crackers, hard dough bread or on its own.
HOW TO STORE IT
You can store it in the refrigerator for up to 3 days. Porridge thickens after sitting, so add more liquid when reheating to achieve the same consistency.
