HOW TO MAKE JAMAICAN PEANUT PORRIDGE
1. Soak 1 cup raw peanuts, 1/4 cup quick cooking oats with 1 cup boiling water for at least 10 mins. Set aside.
2. Add 2 cups water to a pot with 1 cinnamon stick and 1/2 tsp salt. Bring to a boil.
3. Blend the soaked peanuts with 1/2 tsp nutmeg, 1/4 tsp cinnamon, and 1 1/4 cup milk until smooth.
4. Add the mixture to the pot and cook for 10 mins on med heat. Stir frequently.
5. Reduce to low and add 1 tsp vanilla and 1/2 cup condensed milk. Cook for 5 mins.
HOW TO STORE IT
You can store it in the refrigerator for up to 5 days. Porridge thickens after sitting, so add more liquid when reheating to achieve the same consistency.
