INGREDIENTS NEEDED FOR JAMAICAN CHICKEN FOOT SOUP

1. Chicken Foot

2. Pumpkin/Squash

3. Scallion/Green Onion

4. Fresh Thyme

5. Chayote – This is what we call Chocho.

6. Salt

7. Water

8. Carrot

9. Country Style Soup Mix – I used Grace brand.

10. Sweet Potato – Caribbean or Jamaican variety.

11. Yellow Yam

12. Cocoyam

HOW TO MAKE JAMAICAN CHICKEN FOOT SOUP

1. Wash 1/2 -1 lb chicken foot and remove the nails.

2. Add 6 cups of water to a large pot on medium heat.

3. Add 4 sprigs of thyme and 1 scallion and bring to a boil.

4. Wash, peel and cut 1 lb pumpkin, 1 lb yellow yam, 1 1/2 lb sweet potato, 1 chocho, 1 medium carrot, 1 medium cocoyam. Add to your pot and cover and let cook until almost fork tender.

5. Add in 1 1/2 pack of country style cock soup, and salt to taste (optional).

6. Cook until the noodles are soft and the food is fully fork tender.

HOW TO STORE IT

Fridge – You can store this in the fridge for 3 to 4 days in an airtight container.

Freezer – You can also freeze this for up to 3 months in an airtight container.

FAQS

What vegetables can I add? You can add white yam, corn, cassava or spinners (dumpling). This is all up to personal preference.

What other seasonings can I use? You can flavor your pot with scotch bonnet peppers if you like it spicy (boil it whole with the stem on), pimento berries (allspice), garlic, and bouillon cubes if you cannot get the soup mix.

  • ½-1 lb Chicken Foot
  • 1 ½ pk Grace Country Style Mix You can use 1 pack if you prefer
  • 1 lb Pumpkin/Buttercup Squash
  • 1 lb Yellow Yam
  • 1 Chayote/Chocho
  • 1 med Carrot
  • 4 Thyme Sprigs
  • 1 Scallion/Green Onion
  • ½-1 tsp Salt, or to taste optional
  • 1 med CocoYam
  • 6 cups Water
  • 1 ½ lb Sweet Potato Caribbean/Jamaican Variety
