Beef Burritos are a delicious and easy to make Mexican dish that are the perfect on the go meal option for lunch or busy weeknights. There are many ways to customize them to suit your taste, which makes them perfect for picky eaters.
INGREDIENTS NEEDED FOR BEEF BURRITOS
1. Ground Beef
2. Green Bell Pepper
4. Red Onion
5. Tomato Paste
6. Salt
7. Garlic Paste
9. Tortillas
10. Avocados
11. Tomato
12. Shredded Cheddar Cheese
13. Oil
HOW TO MAKE BEEF BURRITOS
1. Add your oil to your pan and heat it on medium low heat.
2. Once warmed, cook your onions and bell peppers for about 4 minutes (stir occasionally so as not to burn them).
3. Add in your garlic paste and cook for 30 seconds.
4. Then add in your ground beef, taco seasoning, salt, tomato paste and mix well.
5. Cook for 6-7 minutes or until the ground beef is no longer pink.
6. Layer your tortilla with 1-2 tbsp of ranch dressing, then add your ground beef, shredded cheddar cheese, diced tomatoes and avocado slices.
7. Roll your beef burritos by folding the top and the bottom over the filling. Then take one side and begin rolling to the other side, ensuring to the keep the filling in the center and from spilling out. If you overfilled your tortillas or have smaller tortillas, then roll it in foil paper for easier eating, cut it in half and serve immediately.

You can switch up this recipe and opt for any of the below fillings for your burrito. For a healthier version, switch to a low carb tortilla (used in this recipe) or add the filling to a bed of greens.

HOW TO STORE IT
You can store these burritos in the fridge in an airtight container for 4-5 days. Alternatively, wrap it tightly in foil and freeze for up to 3 months. Avoiding freezing with the tomato, ranch dressing and avocado as they do not freeze well and will create a soggy burrito. You can opt to have guacamole, sour cream, salsa, and/ Pico de Gallo on the side.
HOW TO REHEAT IT?
Fridge – Reheat it in the microwave on high between 1-2 minutes. Ensure that the beef is heated to 165°F for food safety. Use a thermometer for accurate readings.
Freezer – Defrost in the fridge overnight and reheat it in the microwave. If you choose to microwave it frozen, you will need to do so for twice as long or until full heated. Alternatively, preheat your oven to 350°F and bake the frozen burritos already wrapped in foil for 30-40 minutes.
