Tired of the same old mashed potatoes? These garlic smashed potatoes are a game changer. These are crispy-on-the-outside, fluffy-on-the-inside. They are perfect if you are looking for a side for a get together or a new twist on your usual comfort food.

INGREDIENTS NEEDED FOR GARLIC SMASHED POTATOES

1. Baby Yukon Gold Potatoes

2. Parsley

3. Oil

4. Pepper

5. Salt

6. Garlic

HOW TO MAKE GARLIC SMASHED POTATOES

1. Fill your pot with enough cold water to cover your potatoes. Add 2-3 tsp salt to taste. It should taste like the sea.

2. Cook your potatoes until fork tender. Roughly 25-30 minutes.

3. Once cooked, cool and add your oil and minced garlic.

4. Assemble onto a baking sheet. You may need two depending on the size of your sheet.

5. Using the bottom of a cup, smash each potato to 1/4″ or 1/2″ thick.

6. Sprinkle with your remaining salt, pepper, and parsley.

7. In a 425°F preheated oven, bake for 25-30 minutes. Enjoy.

HOW TO STORE IT

These will keep in the fridge in an airtight container for up to 5 days.

  • 1 tbsp Oil I used high smoke avocado oil
  • 2-3 tsp Salt (for boiling) (plus ¾-1 tsp for sprinkling)
  • ¼ tsp Black Pepper
  • 3 Garlic Cloves Minced
  • 1-2 tbsp Parsley
