These banana oatmeal cookies are the perfect breakfast treat. They are healthy, delicious and use simple ingredients to make.
These cookies are not only quick to make, but they are also gluten-free and dairy free. I love that these are also low in fat and calories and packed with a lot of nutritional benefits. You can customize this by swapping out the sugar with your favorite sweetener or forgoing the sugar altogether. Some other additions could be various nuts, shredded coconut, dried fruit or chocolate chips if you so choose it.
INGREDIENTS NEEDED FOR BANANA OATMEAL COOKIES
1. Banana
2. Brown Sugar
3. Salt
4. Nutmeg
5. Quick-Cooking Oats
6. Vanilla
7. Cinnamon
HOW TO MAKE BANANA OATMEAL COOKIES
1. Add your overripe bananas to a bowl and mash until soften.
2. Add in your brown sugar, salt, vanilla, nutmeg, and cinnamon. Mix until combined.
3. Add in your quick-cooking oats and mix well.
4. Spoon 2 tbsp of your filling, one on top of each other, onto a lined baking sheet. Press out the mixture to 1/4″ thickness and shape your cookie.
5. Bake at 375°F for 12 minutes.
6. Cool for 10-15 minutes. Enjoy.
HOW TO STORE IT
You can store these cookies at room temperature for up to 4 days in an airtight container. If you would like to extend the time, then these will keep in the fridge for up to 1 week.
