Peanut Drops is a traditional Jamaican confection made with peanuts, brown sugar, and spices, cooked down until it forms a thick, caramel-like coating that hardens when cooled. It has a deep, toasty sweetness, with the perfect balance of crunch and chew. Some people add a little ginger for extra flavor, while others keep it classic with just the basics. INGREDIENTS NEEDED FOR JAMAICAN PEANUT DROPS
1. Peanuts – I use roasted for more flavour but you can also use raw peanuts.
2. Water
3. Brown sugar
4. Cinnamon Stick
5. Fresh Ginger
6. Salt
7. Pure Vanilla Extract
8. Ground Ginger
HOW TO MAKE JAMAICAN PEANUT DROPS
1. In a medium pot, add water, grated ginger, cinnamon stick and salt. Bring to a boil on medium heat. Add in your peanuts and ginger powder. Cook for 15 mins.
2. Remove the cinnamon stick and add in the brown sugar. Cook for 15 mins, stirring frequently.
3. Reduce to medium low and add in the vanilla. Cook for about 2-3 minutes until most of the liquid is reduce and the syrup is sticky and stretches like taffy.
4. Quickly scoop out large spoonful’s and drop it on a parchment paper to set. Work fast, as the syrup will harden as it cools.
5. Let the peanut drops cool and set completely at room temperature, about 30 minutes.
HOW TO STORE IT
Store the peanut drops in an airtight container at room temperature. They’ll stay fresh for up to a week.
