WHAT IS THE DIFFERENCE BETWEEN EVAPORATED MILK AND SWEETENED CONDENSED MILK?
Both types of condensed milk are made by heating the milk until about 60% of the water content has been reduced. The difference is that evaporated milk is unsweetened with a thinner consistency, whereas sweetened condensed milk has added sugar and is thicker.
INGREDIENTS NEEDED FOR CONDENSED MILK
1. Milk
2. White Sugar
3. Baking Soda (optional)- This creates a thick and creamy condensed milk.
4. Vanilla (optional)
HOW TO MAKE CONDENSED MILK
1. Add your milk and sugar to a saucepan and bring to a boil on medium-high heat (approximately 10 minutes).
2. Then reduce the temperature and continue to simmer until it thickens, ensuring to stir periodically in between to prevent lumps. You can also use a spoon to skim off any fat that may form on the top of the milk.
3. Once it thickens and coats your spoon, about 45 minutes, remove from heat and add your remaining ingredients.
HOW TO STORE IT
You can store this in your fridge for up to 1 week in an airtight container or in the freezer for up to 3 months.
